quinoa avocado citrus deliciousness

This recipe is adaptable, and delicious in every form. It serves 4, and makes a very satisfying meal. You'll find yourself making it over and over again, and offering to make it for guests. It's quick, simple, and feels gourmet!

Qunioa directions:
Rinse 1 cup of quinoa and place in 1 1/2 quart saucepan with 2 cups of water. Bring to a boil. Reduce to a simmer, cover and cook for 10-15 minutes, until water is absorbed. Transfer quinoa to a large bowl, let cool slightly.

Add to quinoa:
A drizzle (about two tablespoons) of a light Asian dressing, or a lemon poppyseed dressing, your preference
1 Avocado from Mexico, diced (2 if used as a main dish)
Your choice of citrus fruit - recommendations are 2 Cara Cara oranges or 1 ruby grapefruit, peeled, seeded, membranes removed, and diced
2 tablespoons of snipped green onions or chives
2 tablespoons of toasted, sliced almonds, or toasted pine nuts
